Ingredients:
- Gluten Free Bread
- 6-8 eggs
- 2 tbs milk of choice
- Sautéed Veggies of choice
- Cheese (mozzarella/ cheddar/ or feta)
- Coconut oil
- Fresh herbs to top with
Steps:
- Grease a muffin tin with melted coconut oil
- Cut circle portions of GF bread with a cookie cutter or top of a shot glass
- Place the circles of bread in the bottom of each muffin tin
- Whisk 6-8 eggs with 2 tbs of milk
- Add eggs/ milk, vegetables of choice and some salt and pepper
- Pour egg mixture onto of the bread until almost full (they will puff up)
- Top with cheese and/or some fresh spices
- Bake 350 degrees for 18-20 minutes
After egg bites have cooled, you can enjoy them right away or freeze two to a bag for an easy, quick breakfast or snack!
