Easy Gluten Free Egg Bites

 

Ingredients:

  • Gluten Free Bread
  • 6-8 eggs
  • 2 tbs milk of choice 
  • Sautéed Veggies of choice
  • Cheese (mozzarella/ cheddar/ or feta)
  • Coconut oil
  • Fresh herbs to top with

Steps:

  1. Grease a muffin tin with melted coconut oil
  2. Cut circle portions of GF bread with a cookie cutter or top of a shot glass
  3. Place the circles of bread in the bottom of each muffin tin
  4. Whisk 6-8 eggs with 2 tbs of milk 
  5. Add eggs/ milk, vegetables of choice and some salt and pepper
  6. Pour egg mixture onto of the bread until almost full (they will puff up)
  7. Top with cheese and/or some fresh spices
  8. Bake 350 degrees for 18-20 minutes 

After egg bites have cooled, you can enjoy them right away or freeze two to a bag for an easy, quick breakfast or snack!
