
Ingredients:
- 3 cups freshly grated zucchini
- 3/4 cup unsalted butter
- 3 cups of gluten free flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground nutmeg
- 1 1/3 cup unsweetened applesauce + 3 tablespoons honey
- 2 large eggs, beaten
- 2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup Warrior Mix broken up
- optional: 1 cup chocolate chips
Instructions:
- Preheat 325 degrees F
- grease loaf or muffin tins
- Mix dry ingredients together
- Beat wet ingredients together and add to flour mixture, mixing well
- Stir in Shredded zucchini and chocolate chips if being used
- Pour into desired pans and sprinkle broken up Warrior Mix on top (you can choose to mix in the batter if you enjoy a crunchier bread)
- Bake for 40-60 minutes in loaf pan or 15-20 minutes for muffins
