Gluten-Free Zucchini Bread

Ingredients:

  • 3 cups freshly grated zucchini
  • 3/4 cup unsalted butter
  • 3 cups of gluten free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 1/3 cup unsweetened applesauce + 3 tablespoons honey
  • 2 large eggs, beaten
  • 2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup Warrior Mix broken up
  • optional: 1 cup chocolate chips

Instructions:

  • Preheat 325 degrees F
  • grease loaf or muffin tins
  • Mix dry ingredients together
  • Beat wet ingredients together and add to flour mixture, mixing well
  • Stir in Shredded zucchini and chocolate chips if being used
  • Pour into desired pans and sprinkle broken up Warrior Mix on top (you can choose to mix in the batter if you enjoy a crunchier bread)
  • Bake for 40-60 minutes in loaf pan or 15-20 minutes for muffins
